Friday Food Day!

Ooh, I do love to make something nice to eat and if it's quick & easy and uses up
leftovers then that's even better! 
After last night's tea I had a dish of spicy mince & onions left over.....far too delicious
to waste so here's what I made......
I warmed the tortilla in a dry pan, added mince & a little grated cheese to one half then
folded over & left in pan until cheese had just started to melt & sealed the tortilla.
On my plate I had some chopped iceberg lettuce, chopped tomatoes, grated cheese and
a little sour cream. Super quick & easy and oh, so tasty. I would have made more of a
salad but it seemed pointless just for me but spring onions, cucumber & radish would have
been my choice. What do you do with your leftovers? If you have any recipes to share
please let me know......especially using up leftovers!



  1. ooo yes that looks a yummy supper Jo ... we have been very careful about using up bits and pieces too and dear hubby said the other day we don't seem to have much in the rubbish bin when the bin men were on the way hope you are all staying well .. .happy crafting and love sandy xx
